Hi guys! Today I’m sharing my recipe for millionaires shortbread with you, a childhood favourite made vegan.
One of the reasons I decided to make this was that I realised coconut condensed milk existed! My local health food shop sells it, but you can also get it online at Ocado. There’s so much you can do with it, but I was really craving this.
For the shortbread;
- 225g plain flour
- 175g cold margarine
- 75g caster sugar
For the caramel;
- 200g margarine
- 1 x 320g can Sweetened Condensed Coconut Milk
- 4 tbsp golden syrup
For the topping;
- 300g dark chocolate
Preheat the oven to 180C. Line a 23cm square cake tin with baking parchment.
Rub the butter, sugar and flour together in a bowl to make rough dough. Firmly press the dough into the tin and prick all over with a fork. (You can also use a food processor here).
Bake for 5 minutes then reduce the oven to 150C and bake for a further 35 minutes or until light golden brown.
Whilst the shortbread cools in the tin, make the caramel. Gently heat the margarine, condensed coconut milk and golden syrup in a saucepan, stirring occasionally until the butter is melted and the mixture is smooth.
Increase the heat and bring the mixture to the boil, stirring frequently with a wooden spoon. The caramel will visibly thicken and turn golden-brown. This can take around 5-10 minutes. Be careful – it can burn really easily! This was mine once ready;
Set aside to cool slightly, then pour over the cooled shortbread. Allow to cool completely – this will take a few hours/overnight. If you cut into squares but leave in the pan at this stage it will be less likely to crack (unlike mine!).
Melt the chocolate in a bowl set over a pan of simmering water. Pour over the caramel and leave in the fridge until the chocolate has cooled completely.
Cut into squares and enjoy!
You can also add a tsp of salt to the caramel to make it salted caramel, or try marbling milk or white chocolate for the topping.
